Fresh Cabbage Salad

Ingredients

  • 3 cups thinly sliced green cabbage (savoy, napa, or green varieties)

  • ½ cup parmesan shavings

  • 6–8 thinly sliced apples of choice (tart crisp varieties work well here)

  • ¼ cup crushed raw pistachios (preferably Sicilian, Persian, or Greek pistachios)

  • ⅓ cup pitted and quartered fresh cherries

  • Extra virgin olive oil

  • Juice of 1 lemon

  • Kosher salt

  • Fresh pepper

  • Fresh mint leaves for garnish

Directions

  1. Arrange the cabbage on a serving platter in an even layer. Drizzle with olive oil, the juice of half a lemon, and a generous sprinkle of kosher salt. Layer the parmesan cheese over the cabbage, followed by the apple slices. Sprinkle the cherries over the salad. Drizzle again with olive oil, the juice of the remaining half lemon, and another sprinkle of salt. Grind fresh pepper generously over the salad and arrange mint leaves on top to serve.
