I am very disappointed in
"I am very disappointed in the quality of the steel in this knife. I was looking for a knife with a narrow, short blade that would hold an edge. I had fiven up hope of finding one, and was considering going to Walmart, buying one of theirs and grinding it down to the shape I wanted, when I found this one. It was a lttle longer than I wanted, but marginally acceptable. I could not find a reference to the hardness of the steel, so I relied on the company name to assure hardness. Boy was I wrong! The first project was converting a case of apples to applesauce, using the paring knife to clean up the apples. It wound up that I would work 5 minutes on the apples, and then about 2 min cleaning the knife an sharpening it. Fortunately, your sharpener that I bought with the knife does a very good job. In daily use, I sharpen it every time I use it."
