The sharp blade of a Santoku allows anything from regular to wafer-thin cuts - it is therefore now indispensable in kitchens all around the world.

|---|---|---|
| Material | Premium forged steel engineered for lasting strength and corrosion resistance. | Often stamped or made from standard steel blends that may sacrifice durability or rust resistance. |
| Sharpness | 20% sharper than standard knives, thanks to laser-guided PEtec technology. | Factory-sharpened blades that start strong but dull faster and lack precision honing. |
| Craftsmanship | Hand-finished in Solingen, Germany with 200+ years of expertise and precision in every detail. | Mass-produced or partially outsourced craftsmanship that lacks the same heritage and consistency. |
| Corrosion Resistance | Exceptional rust resistance for a blade that stays beautiful for decades. | Prone to staining or rust if not carefully maintained—especially with frequent kitchen use. |
| Edge Retention | Stays sharper twice as long as ordinary knives, reducing the need to re-sharpen. | Edges wear faster over time, requiring more frequent sharpening and touch-ups. |
| Limited Lifetime Warranty | Limited lifetime warranty – a promise backed by generations of quality. | Lifetime coverage may exist, but with less transparency and variable service depending on the brand. |

Gorgeous knife, so many applications to use it
"Perfect size for so many uses when you don't need a chef's knife. Incredibly sharpness and blade quality as always from Wusthof."
Exceptional Precision
"I started my knife collection with another brand, but once I tried Wusthof, there was no turning back. The knife holds a sharp edge and with the proper care, can last a lifetime. The Sankotu is my go to knife, even over a chef’s knife. It is a workhorse that you can depend on."
Amazing
"Zero effort slicing and chopping. This knife is a delight to use. It’s also beautiful!"
My Wife's favorite knife
"This is my wife's absolute favorite knife, and may be the best present I ever bought her. It's the perfect size for almost all kitchen uses. For just about every meal, this knife is involved somewhere. Classic Ikon knives have. . . well, a classic look about them."
Excellent knife
"Love this all purpose knife!"
Excellent
"One of our go to’s for years, recently replaced under warranty, feels exactly the same."
Sharp and Balanced
"This was a replacement knife because a 20 year old handle broke. Wusthof has a wonderful lifetime replacement. I've never put it in the dishwasher, but sometimes things just happen. This replacement is beautiful. So sharp and balanced, it's the one I reach for. I need to sharpen all my other Wusthof's to this degree. I have both sharpeners, so maybe this weekend I will work on them. Thank You Wusthof for standing behind your products."

Q&A
- Is this a half bolster knife?
- All of our Asian-style knives, including the Classic Ikon 5" HE Santoku, have a half bolster. This knife also has a back bolster giving more heft towards the back end of the knife. The Classic Ikon series is known for its half-bolster and back bolster. These are two key features of the Classic Ikon line.
