When it comes to finely chopping fresh herbs, cutting fish, or slicing vegetables the Amici 7-inch Hollow Edge Rotoku Knife is the versatile knife you’re looking for. This Japanese-inspired chef's knife is the only knife in the Amici series with a lighter half bolster; the area between the blade and the handle on forged knives. The half bolster both protects your fingers from the blade and provides enough lightweight maneuverability for more detailed knifework. The Rotoku blade is also slimmer, making this knife particularly suitable for fine cuts and paper-thin slices. The custom-grained Calabrian olive wood handle is naturally water-resistant and antibacterial, and its organic shape fits comfortably in the hands of any size.

"Even though I always sharpened them, I did not realize how dull my old knives were until I got new ones. Be careful when washing them! I have never used this shape knife, and it is taking some getting used to. I was loving that you can scrape up what you have sliced/chopped, but at the same time I hesitate to use my other hand to help pick up food because of how sharp it is. I do love how very thin the blade is which helps with thin slices of many kinds of food. The wood handle is stunning. I wish there were more sizes/types of knives that came in this collection."
