Other Knives
Material Premium forged steel engineered for lasting strength and corrosion resistance. Often stamped or made from standard steel blends that may sacrifice durability or rust resistance.
Sharpness 20% sharper than standard knives, thanks to laser-guided PEtec technology. Factory-sharpened blades that start strong but dull faster and lack precision honing.
Craftsmanship Hand-finished in Solingen, Germany with 200+ years of expertise and precision in every detail. Mass-produced or partially outsourced craftsmanship that lacks the same heritage and consistency.
Corrosion Resistance
Exceptional rust resistance for a blade that stays beautiful for decades. Prone to staining or rust if not carefully maintained—especially with frequent kitchen use.
Edge Retention Stays sharper twice as long as ordinary knives, reducing the need to re-sharpen. Edges wear faster over time, requiring more frequent sharpening and touch-ups.
Limited Lifetime Warranty Limited lifetime warranty – a promise backed by generations of quality. Lifetime coverage may exist, but with less transparency and variable service depending on the brand.

Questions? We Have Answers

What sets WÜSTHOF knives apart from other brands?

WÜSTHOF is one of the few brands permitted to use the label “Made in Solingen” on our knives rather than the less restricted “Made in Germany.” Solingen, Germany is the steel manufacturing capital of the world and, as such, needed to take precautionary measures against fraudulent products bearing the prestigious name, “Solingen.” In 1938, Solingen became the only city in the world whose name is a registered trademark. To bear the name Solingen, all key manufacturing stages must have been processed and finished within Solingen, and the product must meet strict quality standards. This means that even cutlery manufactured entirely within Solingen’s town boundary may not be entitled to bear the name Solingen if it does not meet these required quality standards.

Some of our competitors use the label “Made in Germany,” which does not carry the same significance. We have the honor of labeling our products “Made in Solingen.”

What is Precision Edge Technology (PEtec)

WÜSTHOF’s proprietary state-of-the-art technology incorporates a computer-controlled method for putting the edge on forged knives. Using laser-guided precision, our knives are 20% sharper with twice the edge retention. All forged knives are manufactured using PEtec.

What do the numbers printed on my blade mean?

The number etched on your blade indicates the year it was made — just add “20” in front of it.

In some cases, you might see a second number, which shows the blade length in centimeters.

There is no item number printed on the blade.

Examples:

• “25” means the blade was made in 2025.

• “22 / 20” means the blade was made in 2022 and is 20 cm long.

What is the difference between forged and laser-cut stamped knives?

Forged knives go through over 40 steps in our factory to create the top quality blades WÜSTHOF has to offer. Forged knives include a bolster, which helps to balance the knife. Laser-cut stamped blades go through 14 steps in our factory, and are more economically priced. They are lighter in weight, and do not have a bolster.

What are the most important knives to start a set?

The most important knife in any kitchen is the chef’s knife, and after that, it depends on your own personal preferences when cooking.

How do I keep my knives sharp?

WÜSTHOF knives can be honed and sharpened using a hand-held sharpener, an electric sharpener, a sharpening or honing steel, or a whetstone. We recommend using the same brand sharpener as your knife collection, to ensure that the material used is the correct hardness for the steel on your knives. Our sharpening angle for standard blades is 14˚ per side, and for Asian-style blades (Santokus, Nakiris) is 10˚ per side. We offer a variety of sharpening products with pre-set angles. Great knifes ! Great warranty !

"My wife's go to knife for vegetable and salad preparing. Our original 7" Santoku that we purchased at least 10 years ago had issues with the handle cracking and pieces coming off. Filled out the online warranty return form and shipped it back. Wow! do they back up there product. Emailed me full credit and a code to choose a new knife at there online store. Went with 7" classic ikon. Very sharp blade, nice handle design and weight. Nice to have this back in our Wuthof knife set up of chefs, pairing and scissors block. Also purchased another 7" Santoku Classic for myself. I handle all the meat so why not."

Fantastic!

"It’s my go-to knife for most everything now. We have a Santoku from another mfr and actually bought this one because we have a travel trailer and wanted this style to take along. Had used a scalloped type blade before and was pleased with how the foods fell away instead of sticking to the blade, i. e. potato, onion, tomato, etc. I like the feel of this knife. It seems nicely balanced and does a have minimal bit of heft to it, but I like that feel. It is insanely sharp as one might expect. This one is 14º of blade angle vs our other German knives which are 15º. Not sure, but may have to invest in a different type of sharpener beyond a honing steel for when the need comes. Also bought the “guard” which I am very pleased with. I was hesitant because I wanted something durable enough to protect the blade as we bounced down the road and it’s jostled along with the other galley stuff. The person I spoke with at Wüsthof (Donna I think) was *very* helpful. She recommended the wide blade guard and not the magnetic. I was somewhat hesitant as it was “felt” and having not seen it thought it would be flimsy. It is a felt lined encasement of rigid vinyl(?) or plastic. It’s fantastic and I’m sure will protect the blade. Very pleased and no regrets!"

7" santoku ikon

"With the few things I've used it for, I'm impressed. Im eager to see how the blade holds up through new tasks and sharpening over time. I'm very pleased. It's fun."

We received this knife as

"We received this knife as part of a warranty claim. We previously had the Classic 8", which was a fantastic knife until the knife blade cracked (weird factory defect). However, as an excellent company, Wusthof replaced our knife free of charge. We've had our Classic Ikon 7" for almost a week now and it's been amazing. The feel and weight of the knife are unmatched compared to our other knives from Amazon, Walmart, etc. You get what you pay for! We'll be buying more in the future! Thanks, Wusthof, for excellent knives and great customer service."

Grant M. (5/5)

Good but not great.

"The design and feel are great. However they do not perform much better than knives have the price. I was hoping they would."

Q&A

What are the best options for sharpening this knife?
First, it's important to understand the difference between honing and sharpening. This is critical to the maintenance of any Wusthof knife. Honing realigns the existing edge to keep it razor-sharp. You will want to hone your knives regularly using either a honing steel or the fine slot only of a handheld sharpener. Here is a good link that shows the proper method for honing your knives: How to Hone a Knife - WÜSTHOF - Official Online Store (wusthof.com) With regular honing, you will not need to sharpen your knives more than about once every year or two, depending on use. When it's time to sharpen your knives, you can use the coarse slot of a handheld sharpener, a whetstone, an electric sharpener, sharpening steel or the use of a professional sharpening service. Sharpening removes a bit of steel to create a new edge. For this reason, you only want to sharpen on an as-needed basis so as to not remove too much steel. Here is a link that explains the honing/sharpening process a bit more: How To Sharpen Your WÜSTHOF Knives - WÜSTHOF - Official Online Store (wusthof.com) At this time, we do not have an electric knife sharpener. We have several styles of the handheld sharpener. These work well when used properly. It's important to keep your knife perpendicular to the counter when drawing your blade through the slot. Do not lean it to the right or the left. You also don't want to press down with too much pressure. You can effectively sharpen your knives using just the weight of the knife as you pull it through the slot. Using a whetstone takes a lot of finesse and practice. Many customers prefer this method but are dedicated to their cutlery and sharpening craft. We are not currently offering our in-house sharpening service. I do expect that it will reopen but don’t have an ETA at this time. For further information please reach out directly to our Customer Support Team at info@wusthof.com
