"My wife's go to knife for vegetable and salad preparing. Our original 7" Santoku that we purchased at least 10 years ago had issues with the handle cracking and pieces coming off. Filled out the online warranty return form and shipped it back. Wow! do they back up there product. Emailed me full credit and a code to choose a new knife at there online store. Went with 7" classic ikon. Very sharp blade, nice handle design and weight. Nice to have this back in our Wuthof knife set up of chefs, pairing and scissors block. Also purchased another 7" Santoku Classic for myself. I handle all the meat so why not."

"It’s my go-to knife for most everything now. We have a Santoku from another mfr and actually bought this one because we have a travel trailer and wanted this style to take along. Had used a scalloped type blade before and was pleased with how the foods fell away instead of sticking to the blade, i. e. potato, onion, tomato, etc. I like the feel of this knife. It seems nicely balanced and does a have minimal bit of heft to it, but I like that feel. It is insanely sharp as one might expect. This one is 14º of blade angle vs our other German knives which are 15º. Not sure, but may have to invest in a different type of sharpener beyond a honing steel for when the need comes. Also bought the “guard” which I am very pleased with. I was hesitant because I wanted something durable enough to protect the blade as we bounced down the road and it’s jostled along with the other galley stuff. The person I spoke with at Wüsthof (Donna I think) was *very* helpful. She recommended the wide blade guard and not the magnetic. I was somewhat hesitant as it was “felt” and having not seen it thought it would be flimsy. It is a felt lined encasement of rigid vinyl(?) or plastic. It’s fantastic and I’m sure will protect the blade. Very pleased and no regrets!"

"We received this knife as part of a warranty claim. We previously had the Classic 8", which was a fantastic knife until the knife blade cracked (weird factory defect). However, as an excellent company, Wusthof replaced our knife free of charge. We've had our Classic Ikon 7" for almost a week now and it's been amazing. The feel and weight of the knife are unmatched compared to our other knives from Amazon, Walmart, etc. You get what you pay for! We'll be buying more in the future! - First, it's important to understand the difference between honing and sharpening. This is critical to the maintenance of any Wusthof knife. Honing realigns the existing edge to keep it razor-sharp. You will want to hone your knives regularly using either a honing steel or the fine slot only of a handheld sharpener. Here is a good link that shows the proper method for honing your knives: How to Hone a Knife - WÜSTHOF - Official Online Store (wusthof.com) With regular honing, you will not need to sharpen your knives more than about once every year or two, depending on use. When it's time to sharpen your knives, you can use the coarse slot of a handheld sharpener, a whetstone, an electric sharpener, sharpening steel or the use of a professional sharpening service. Sharpening removes a bit of steel to create a new edge. For this reason, you only want to sharpen on an as-needed basis so as to not remove too much steel. We have several styles of the handheld sharpener. These work well when used properly. It's important to keep your knife perpendicular to the counter when drawing your blade through the slot. Do not lean it to the right or the left. You also don't want to press down with too much pressure. You can effectively sharpen your knives using just the weight of the knife as you pull it through the slot. Using a whetstone takes a lot of finesse and practice. Many customers prefer this method but are dedicated to their cutlery and sharpening craft. We are not currently offering our in-house sharpening service.
